Favorite dinner: Shepherd's Pie:

Shepherd's Pie

I love a meal I don't need a recipe for!!!

I used to make this all the time when my big kids were little and my 20 year old asked for it for his birthday dinner!!!

Really-how embarrassing it is so easy and cheap too! (if you find ground beef on sale!!!)

So I made it again tonight cuz the kids asked for it:

I used 5 lbs red potatoes not peeled and mashed them.
Then I put the mashed potatoes on the bottom of two casserole dishes.
I think I am the only one who makes Shepherds pie with the mashed potatoes on the bottom!
Dump about 3 lbs ground beef (seasoned if you want) on top of mashed potatoes.
Then a can of corn or frozen (or whatever veggie you want) on top of meat.
Then of course I have to put shredded cheese on it.
I use cheddar or whatever I have. Bake for 45 min to an hour.
Done!
Yum, we only had 10 eating it tonight so we had just enough!!!
Everyone had seconds and I ended up with a small bowl left.
I think the secret to my sanity and cooking is simple and easy...
if you look online there are so many complicated recipes for this dish.

Mexican Chicken Soup



KELLY'S Favorite 17 DAY diet  “Mexican Chicken Soup”
Ingredients

§  4 whole Boneless, Skinless Chicken Breasts
§  1 Tablespoon Olive Oil
§  1-1/2 teaspoon Cumin
§  1 teaspoon Chili Powder
§  1/2 teaspoon Garlic Powder
§  1 teaspoon chipotle seasoning
§  1/2 teaspoon Salt
§  1 Tablespoon Olive Oil
§  1 cup Diced Onion
§  1/2 cup Diced Green Bell Pepper
§  1/2 cup Red Bell Pepper
§  1/2 cup orange pepper
§  3 cloves Garlic, Minced
§  2 can (10 Oz. Can) Rotel Tomatoes And Green Chilies
§  32 ounces, fluid Low Sodium Chicken Stock
§  3 Tablespoons Tomato Paste (don’t always use this)
§  1 cups Hot Water

§  FOR THE GARNISHES:
§  Sour Cream
§  Diced Avocado
§  Diced Red Onion
§  Salsa Or Pico De Gallo
§  Grated Monterey Jack Cheese
§  Cilantro

Preparation Instructions
Preheat oven to 375 degrees. Mix cumin, chili pepper, garlic powder, and salt. Drizzle 1 tablespoon olive oil on chicken breasts, then sprinkle a small amount of spice mix on both sides. Set aside the rest of the spice mix.
Place chicken breasts on a baking sheet. Bake for 20 to 25 minutes, or until chicken is done. Use two forks to shred chicken. Set aside.

Heat 1 tablespoon olive oil in a pot over medium high heat. Add onions, red pepper, green pepper, and minced garlic. Stir and begin cooking, then add the rest of the spice mix. Stir to combine, then add shredded chicken and stir.
Pour in Rotel, chicken stock, tomato paste, and water. Bring to a boil, then reduce heat to a simmer. Simmer for 45 minutes, uncovered.
Check seasonings, adding more if needed---add more chili powder if it needs more spice, and be sure not to undersalt. Turn off heat and allow to sit for 15 to 20 minutes before serving.
Ladle into bowls, then top with sour cream, diced red onion, diced avocado, pico de gallo, and grated cheese, if you have it! (The garnishes really make the soup delicious.)

PAPA!!!

I just got this message in my comments: You might have to check on this picture a bit, because either the cardinal in the center is not our new Pope Francis, or he was photoshopped into the picture because he wasn't made a cardinal until 2001 and the date of the photo was said to be 1979. Thanks Kathy...I tried to find the resource before I posted it and couldn't. I still love it and love Pope Francis!!! God is so good to give us such a strong shepherd! Any other info anyone has on this photo...let me know!

Our Family rules and some milestones



My big kids keep reminding me of the rules...
so the little guys don't get away with anything they didn't get to do!!!
So they helped me compile this list together for a reminder:

Our Family rules and some milestones:
One –learn to walk
Two-learn to talk
Three-get on job chart
Four-give up naps & no more crib
Five- ride a bike
Six- learn to read
Seven/eight-first penance and first communion
10- Can have occasional sleepovers-girls get to paint their nails
11- iPod shuffle*
12-boy-knife & girl-ear pierced
13-Confirmed-ipod *
14-highschool & youth group activities
16-get a facebook
17-get a twitter, graduate & laptop *

*these things they purchase themselves

I am sure I forgot something and yes we make reasonable exceptions on occasion, like when I painted my little flower girls fingers purple for their big sisters wedding.  I am pleased when they ride a bike or read earlier than normal but this is just a guideline! 

My advice to anyone out there...
love your babies as much as you can...
and have lots of them if it is the 
WILL OF GOD!!!

Rob's Marinade:



Every time we serve this everyone wants the recipe!!! We marinade it on chicken:

Marinade

1 cup oil
1/2 cup red wine
1/2 cup red wine vinegar
1/4 cup soy sauce
1/4 cup Worcestershire
2 teaspoons seasoned salt
2 teaspoons dry mustard
2 teaspoons dried rosemary
1 teaspoon crushed red pepper (optional)
A few cloves garlic
1 chopped onion

Throw everything in a sauce pan. Bring to boil. Turn off and let cool and use.
Marinade at least 6 hours...over night is best...tastes amazing on the grill but you could bake or broil if necessary. ENJOY!!!

Lenten Blessings:

One of the things we gave up for Lent was TV from Monday till Friday. 
We lived without a TV for 10 years...
boy,  those WERE the days! 
But that horrible machine came into the house and took over...
WE started saying no TV on school nights...
but when you homeschool and have three college kids...
 what exactly is a school night?
First it was a sport, than a cooking show, and oh the educational stuff...
well, it was on more and more! 

The kids have loved doing puzzles. 
They have loved them so much that I asked for some on FREECYCLE 
and I got eight great ones in one day!!!
They also have been pulling out games we haven't played for years...
and reading!!! 
Wow, I love to see my kids read!!!
Joseph, got this Smog Hobbit puzzle for his birthday...this started off the puzzle marathon!
Some other Lenten benefits:
My 16 year old gave up eating junk food for Lent so
she has been cooking up a storm of yummy healthy treats!
Each year we give up sweets and I actually love seeing them find alternative creative treats!
I know Lent isn't always about giving up stuff-
but in our desire for worldly things we grasp on to Our Lord for help!
I did stop our TV fast for this:

God Bless the Cardinals as they beg the HOLY SPIRIT for wisdom!
This ADOPT A CARDINAL site was a fun site for my kids!
Another Lenten commitment was to go to bed earlier for everyone...
so GOOD NIGHT I am off to bed!!!
