Antipasto Salad

1 to 1 and 1/2 heads of iceberg lettuce 1/3 pound salami 1/3 pound Italian ham 1/3 pound pepperoni 1/2 to 1 cup mozzarella cheese 3 or 4 Tbsp of parmesan cheese 1 medium green pepper 1 onion (vidalia or Spanish) 2 tomatoes 1 jar peppercinos 1 jar artichoke 1/2 cup seasoned olives Red wine vinegar to taste olive oil to taste oregano (2 to 3 tsp.) salt and pepper to taste Thy Will Be Done!!! +JMJ+

My Husband turns 50 today...and not happy about it...

4. You sent me a letter from college.

6. Loved our first date at Beef Stake Charlie’s for your 20th b day.
7. Loved getting notes from you in the mail from JMU.
8. Your visits home from college to see me.
9. Making you dinner when we were dating.
10. Saving up my money to buy you gifts.
11. Having you teach me about which fork to use at a fancy restaurant.
12. Getting to go to fancy shows and plays with your family.
13. Visiting you at college.
14. You giving me your college ring.
15. Sharing my faith with you.
16. Getting engaged on Sugar Loaf Mountain.
17. Saying I DO!!!
18. Getting pregnant on our honeymoon.
19. How you took care of me when I was in labor with Alex.
20. Seeing you go crazy over your baby girl.

Baby #11 is really seven!!!

Wow, My baby E is seven today. Everyone thought it was pretty funny that my 11th child was 11 lbs. The joke was baby #12 will be 12lbs...not if I (or my midwife) could help it! 

Dear Eric, you are a super sensitive and sweet young man. Daddy and I love you very much and can't wait to see what God has in store for you. This is a big year for you! You get  your First Penance and your First Holy Communion. Keep close to Jesus and everything in life will be fine. We love you forever, like you for always, as long as we are living our baby you'll be!!!

daddy is still mad at me for cutting your hair!

Here I am about to pop two weeks before you were born!

Overnight Oatmeal:

Peanut Butter over night oatmeal:
Ingredients
  • 1/4 cup uncooked old fashioned rolled oats
  • 1/3 cup skim milk
  • 1/4 cup low-fat Greek yogurt
  • 1-1/2 teaspoons dried chia seeds
  • 1 tablespoon peanut butter (may substitute PB2 powdered peanut butter)
  • 1 teaspoon honey, optional (or substitute any preferred sweetener)

Directions
In a half pint (1 cup) jar, add oats, milk, yogurt, chia seeds, peanut butter (or PB2), and honey. Put lid on jar and shake until well combined. Remove lid, add bananas and stir until mixed throughout. Return lid to jar and refrigerate overnight or up to 2 days. Eat chilled.

Nutritional Info (using PB2 and no honey or sweetener): 264 calories, 5g fat, 55g carbs, 8g fiber, 15g protein; Weight Watchers PtsPlus: 8

My oldest son's birthday:

My son loves Christ with his whole heart, soul, and mind...so when he and I attended 6:30am mass together I couldn't of picked out more perfect readings for him!

Reading 1 is 49:1-6

Wow, my spunky daughter just turned 18!!! In our home that means you are old enough to date. I know whomever does gain favor in this young ladies eye will be a lucky man! This special girl says it like it is...no filter no prudence...you get what you get! That is a gift and a curse! She loves the Lord and that is all that matters!

My first baby turns 24!!!

Wow, aren't I 24? It feels like it was just yesterday when I was 24. Those were great days!!! Being 24 and expecting baby # 3. Feeling young and loving my babies!!! Learning how to be a wife and mommy.

I couldn't of asked for a better "honeymoon" gift than God sending you to daddy and I!!! You were "born old" and took care of each baby sibling like they were your own. Always mature, smart, and responsible. (even if teenage girls don't want those qualities!) Thanks for rejoicing with us with each baby and being there to help when we needed you. As your siblings always say, "She really raised the bar for our family!" Love God and trust and follow in HIS ways all the days of your life and all will go well!!! THY WILL BE DONE!!! Hope your year is full of miracles!!! Love ya!!!
