How to save money from a Debt-free family of 16

 

Let me share what I call my S.A.M. hack. Why SAM? Well, it has been my nickname since I was twelve weeks old. My four older brothers thought I looked like a boy, and since my brothers could do no wrong in my eyes, it stuck. Unfortunately, my beautiful birth name Cecilia Ann did not. I tried to make up for that by naming my tenth child, the fifth girl, Cecilia. Even when I try to be a mature catholic woman and write Cecilia on my name tag on events, those who know me say, “nice try! You are a SAM through and through!”

 

I could go on and on about S.A.M. Hacks. Let me give you an idea of where I am going with this. With my hacks, I can promise you if you follow some of them, you will save money. Maybe not millions, but it all starts with baby steps.

 

 

Let us start with S. S is for words like save, simplify, self-control, sales, sacrifice, suffer, and then some more.

 

“A” stands for things like asking for help, being assertive, appreciating, and abundance. These are tactics I use daily in my life.

 

The last letter is M. “M” is a good one, make a plan, minimize, make do, motivate, meditate, and Mother Mary.

 

I have used these tricks to help my husband and I live debt-free, pay off our house, and plan to retire early.

 

Some may only be able to pick one. I would suggest using what works for your family and your state in life.

For example, “S” for save. If you have a bad habit like going through the drive thru every Tuesday after soccer practice, remember to pack snacks. Boom! Ten dollars saved per week. If you have kids like mine who go to wash their hands in the kitchen sink and grab the roll of paper towels like they are streamers at a birthday party, then stop buying them or hide them until they learn how to use them sparingly. We have a box of rags under the sink. They are used daily…reminder to self…” don’t cry over spilt milk!” Check your online credit cards for monthly payments. You may be paying for a subscription or membership you did not realize you were still paying monthly fees, or you no longer need.

How about ”A”, asking for help? My superpower is being a spoiled brat. Just ask my eight older siblings. Or am I just persistent, a nag, annoying, stubborn, tenacious, and needy? Oh yes, I am all those things. God bless my dear husband and friends. Asking for help is not a dreadful thing. As I have said often, asking for help is giving another person the grace of service. I used to be very much in need of help, socks to match, kids to be read to, milk needed at the grocery store, someone to drive my kids, the list can go on and on. Now that I am     not pregnant and nursing, ALL.THE.TIME. I do not need as much help. It is my turn to offer to help, match some socks, read to others, grab some milk at the store, and drive other kids. It is my pleasure. 

I tell my kids you are not spoiled if you appreciate. Another a word I love. Writing a thank you note, texting a photo of you using the item given, or just a call to say, “hey, thanks again for picking that up for me!” Remember the leper who came back to thank Jesus. Were there not nine others??? Do not be the nine.  Again, these suggestions do not work for everyone.

 My go to is what is best for your family. So, when I say A is for Abundance I mean buying extra. This only works if you have a big freezer, a spot in your house for a gift basket or closet or can handle extra junk in your house and the chaos it may cause in your mind. You know who you are. I have a go to cabinet with baskets labeled. Frames, candles, girl, boy, baby, grandchildren on them. When I find a good deal, or I hit the after-holiday clearance bin I fill up with the stuff I know I will use. White fancy candles are great for a friend's birthday, anything with unicorns is perfect for my granddaughters, a baby bib or blanket are perfect when you are delivering a meal to a new momma, so I grab some when they are on a super sale. At the end of the year, I donate a basket with all the extras. Food, there was a time when I could not keep up with all the food my kids ate. Then something sad happened, my three college boys moved out and leftovers were not eaten, I cooked too much for meals, so my husband and I tried to scale back for the six small eaters at home. We now adopted about five widowers that get little packages weekly. I cannot stand to waste anything, so this helps me from ever throwing out food.

 


Make a plan is essential for any family, with food, life, or just plain get through the day. I hope I am not the only crazy mom who has showed up at the doctor and the receptionist says, “your appointment is tomorrow, not today.”  Minimize, even my clutter free friends find it necessary to minimize, I am so bad at this because I like my junk, but I still fine time to clear out when I can.  (like having guests over) My mommy taught me the pure skill of making do or offer it up as some of us say. Do not like your sneakers, make do until your birthday.  Want a new car? Make do with this one until it is unfixable.  How about getting motivated? This may be part of your money spending plan. Make a note or sign or something that says when we save $400, we can put a down payment on that vacation, or that fun day trip. I have learned the hard way about missing my time to meditate. There is a saying, “if your too busy to pray than pray longer.” A priest friend of mine says, “don’t tell me you forgot to pray today, did you forget to eat today?” Especially mommas need some quiet time. I would stick my babies in the bathtub and say the rosary or read while sitting next the them while they were content while splashing around. You would be doing yourself a disservice if you didn’t call on Mother Mary for her intercession and example. Our Lady Undoes of Knots is my new go to. She does not miss a beat when I am in a predicament

I hope you find a nugget or two in this little SAM hack. I know it is hard but as Catholic Mommas we can use this suffering to bring our souls and the souls of our family to heaven. Pound Cake, and I mean "pound"



Pound Cake
  • 1 1/2 cups butter, softened at room temp
  • 1 (8-ounce) package cream cheese, softened at room temp
  • 3 cups sugar
  • 6 large eggs
  • 2 3/4 cups all-purpose flour
  • 1/8 teaspoon salt
  • 1 tablespoon vanilla extract
·         Preparation
·         Beat butter and cream cheese at medium speed with an electric mixer until creamy (do not over beat);
·          
·         gradually add sugar, beating well.
·          
·         Add eggs, 1 at a time, beating until combined.
·          
·         Sift 3 cups of flour. Combine flour and salt; gradually add to butter mixture, beating at low speed just until blended after each addition. Stir in vanilla
·          
·         Pour batter into a greased and floured 10-inch Bundt pan.


Bake at 300° for 1 hour and 40 minutes or until a wooden pick inserted in center comes out clean. 

      Cool in pan on a wire rack 10 to 15 minutes; remove from pan, and let cool completely on wire rack.

White Chicken Chili








White chicken chili
(thanks Cheryl and Kathy)
Simmer the following in a big pot: 
1medium onion
1medium chopped green pepper
1tablespoon margarine

Once they have softened add 1-2 cups chopped precooked chicken to the onions/pepper

When these items are good and hot,
ADD 3 cans cannellini beans (white beans, can be hard to find at some stores), add the juice from the beans too!
Add 1-2 packages of chili seasoning mix…depending on how flavorful you like your chili

Mix these with the beans, chicken, veggies.
Now Add 
1 Large can or crushed tomatoes (28oz can)
2 15oz cans of whole or (petite diced tomatoes)
1 can of corn (drain water before adding to mix)

Stir all these ingredients together and let it get hot.  

Taste the chili to see if you think needs more flavor.  Then add the last ingredient
1/3 cup of sugar (really helps to bring out the flavor of the tomatoes)

Cooking!?@#*

I read lots of blogs from amazing women who cook up a storm...wow, their photos could be in a cookbook they look so good.

Do all bloggers have to be good cooks? Well people this one is not!!!

I have pretty much always been a bad cook. Sure I have some things I can make easily, but others...wow, it's like brain surgery!!!

So, when I do post a recipe it is usually easy with a few ingredients.

So here is an easy fall back especially in the winter when you want some comfort food.

Chrissy's super easy yummy chicken broccoli casserole:

This is especially good when you forgot to take out meat for dinner and have a freezer full of chicken breasts like I do. This recipe calls for boiling chicken in a pot of water which takes about 30 min with frozen chicken!

Mix together:
2 Tlbs. lemon juice or fresh lemon
can of cream of mush soup
can of cream of chicken soup
(really 2 cans of cream of anything would work)
1/2 cup of mayo (I use fat free-can't tell the difference)
3/4 cup of melted butter
one pack of Italian Seasoning (I think this is the secret ingredient)
1/2 cup of cheddar cheese
Pack of chicken breasts or any boneless chicken or chicken meat off of the bone (about 5lbs)
bag of broccoli pieces (you choose how much you want) 

cook on 350 degrees for about 45minutes

My kids all like this even though the little ones get scared when they see the broccoli! Also  they like to dip lots of bread in the self made gravy, so make sure you serve with bread.

Also, the other secret besides me not being a good cook...my house is usually a mess and I am not a very organized homeschool mom...(Boy someone is gonna take away my blog license!) But, my husband and kids are really cute and I love them so much!!!

Favorite dinner: Shepherd's Pie:

Shepherd's Pie

I love a meal I don't need a recipe for!!!

I used to make this all the time when my big kids were little and my 20 year old asked for it for his birthday dinner!!!

Really-how embarrassing it is so easy and cheap too! (if you find ground beef on sale!!!)

So I made it again tonight cuz the kids asked for it:

I used 5 lbs red potatoes not peeled and mashed them.
Then I put the mashed potatoes on the bottom of two casserole dishes.
I think I am the only one who makes Shepherds pie with the mashed potatoes on the bottom!
Dump about 3 lbs ground beef (seasoned if you want) on top of mashed potatoes.
Then a can of corn or frozen (or whatever veggie you want) on top of meat.
Then of course I have to put shredded cheese on it.
I use cheddar or whatever I have. Bake for 45 min to an hour.
Done!
Yum, we only had 10 eating it tonight so we had just enough!!!
Everyone had seconds and I ended up with a small bowl left.
I think the secret to my sanity and cooking is simple and easy...
if you look online there are so many complicated recipes for this dish.

THE LAST SUPPER...


We finished our last meal...


When I had my 12Th baby it was my first C section. After I got home we started getting meals everyday from my amazing friends and community. We got about 60 meals, yes, two months worth of food.


Not only did it help with not worrying about cooking, but it sure cut back on the grocery bills. So, we had more money to pay for the five different antibiotics I was on!!!


THANKS TO ALL OF YOU FOR THE PRAYERS, FOOD, AND SUPPORT DURING A DIFFICULT POSTPARTUM.


I am back to my old crazy self!!!

Milk Lovers May Live Longer Because of Decreased Disease Risk

July 22 (Bloomberg) -- The secret to a longer life may be
this simple -- milk.
Drinking milk can lessen the chances of dying from
illnesses such as heart disease and stroke by as much as 20
percent, researchers led by Peter Elwood at Cardiff University
and Ian Givens from the University of Reading said today in a
statement distributed by the AlphaGalileo Web site.
Cow's milk provides calcium, potassium, protein, and
vitamin D, but also sugars and saturated fat and is often
portrayed as an unhealthy choice, the researchers said. The
study, based on evidence from 324 studies of milk consumption as
predictors of coronary heart disease, stroke and diabetes, found
that health benefits associated with the drink outweigh dangers.
"Our findings clearly show that when the numbers of deaths
from coronary heart disease, stroke and colorectal cancer were
take into account, there is strong evidence of an overall
reduction in the risk of dying from these chronic diseases due
to milk consumption," Givens said in the statement. "There is
convincing overall evidence that milk consumption is associated
with an increase in survival in Western communities."
Coronary heart disease causes arteries to harden and narrow
because of plaque. Heart disease causes about 27 percent of all
deaths in the U.S., according to the Centers for Disease Control
and Prevention. It's the number one killer worldwide, according
to the Geneva-based World Health Organization.
Increased milk consumption is also likely to reduce health
care costs "substantially," due to reduced chronic disease,
the researchers said.
"There is an urgent need to understand the mechanisms
involved and for focused studies to confirm the epidemiological
evidence since this topic has major implications for the agri-
food industry," Givens said.
The research was funded by the universities that led the
study, Givens said in an e-mail.

what's for dinner???

Been married for 20 years and still haven't figured out this cooking thing...have tried all sorts of gimmicks from once a month cooking, cool cookbooks, to Internet sites like this. The best advice I can give and live by is simple, simple, simple!!! The kids don't like it when I cook fancy or use special spices and additions...Actually the best cooking advice I can give is having an amazing group of friends and family who cook for you when you have a baby!!! Last baby we had; we had meals cooked for us for over 2 months!!! Now that is a cool cooking solution...and now you know why Rob and I are having our 12Th child!!!

food:
yikes, I am a really bad cook...my husband is a great cook...we eat super simple and easy...not organic...(tried this-way too expensive for us)

For example:
pasta (tortellini, ravioli, sausage, meatballs)
pizza
beef (roast)
turkey (whole)
chicken (roasted)
breakfast for dinner (eggs, pancakes...)
a ham
pork roast
tacos
fajitas
hamburgers/hot dogs
steak sandwich's
(whatever meat is on sale)

we serve some form of noodles, rice, or potatoes with each meal...some kind of bread, salad or veggie...

dessert every other night or on special feast days...

Hard Brown Sugar
It happens to the best of us: rock hard brown sugar. How to soften it? Ten easy tips below:
Place the brown sugar in an airtight container with a slice of fresh bread placed on top. Seal and leave overnight. It should be soft and fresh again in the morning, if not just let it sit another day or two. This is the one I tried...it worked great...in two days my rock hard brown sugar was soft.
Sprinkle a few drops of water over the chunk of hardened sugar, place in a plastic bag, seal, and let sit for a couple days.Place brown sugar in an open container, then top with a moistened cloth (paper towel works too). Let sit overnight.
Place the hardened sugar in an airtight container with a few apple slices. This should soften the sugar within the next day or two. Remove apple slices once sugar is soft again.
Use foil or plastic wrap to cover the top of the sugar. Then set a dampened sheet of paper towel (not dripping wet) on top of the foil.
Place in an airtight container and seal. Let sit overnight or a few days as needed. Remove foil and paper towel once the towel is dry and sugar is fresh again.
Buy a clay disc or if you have a pottery piece on hand (from a broken clay pot, etc.), set it in water for about 30 minutes. Dry the piece so it isn’t dripping wet. Put the clay piece in a container with the sugar and seal. Check after a few days. Keep the piece in with your sugar for months if you’d like–will keep it soft.
Quick Tip #1: Need the sugar soft now? Put the brown sugar in a container and place in the microwave with a small bowl full of water beside it. Microwave for about 1 minute–check. If it’s still hard, try for another 30 seconds. You can keep doing this until the sugar is soft, but watch that you don’t melt the sugar.
Quick Tip #2: Place the hardened sugar in a baking pan and set in oven (temperature at about 250° F). Check after 5 minutes. If still not soft, continue checking every few minutes until it’s soft and ready to use.
Quick Tip #3: Place the brown sugar chunk in a microwave safe plastic bag. Take a square of paper towel and moisten with water (not dripping wet–wring out excess). Place the wet paper towel in the bag with the sugar and seal. Place in the microwave for approximately 20 seconds. If still not soft, microwave for a few seconds more, repeating until the sugar is ready to use. Be careful not to melt the sugar.
Quick Tip #4: Stick chunks of the brown sugar in a food processor or blender and chop/pulse until usable.For best results, make sure to store brown sugar in a sealed, airtight container. A clay disc kept in the container can keep it soft for months (see tip above for clay disc).Brown sugar can also be stored in the freezer and thawed a few hours before using.

Easy recipes are best. Take any box cake mix and add two eggs and 1/2 cup of oil, about 1 cup of stuff (choc.chips, m n m's, nuts, cinnamon, raisin's, etc...) and cook for 7-12min on 350 and you have an easy great cookie!!!
